Used to be that most people worked the land, producing just enough food for themselves, with a little left over for the nobility and merchant classes. Since land is limited the population was limited. With improved farming techniques the farmers started producing much more food, more than they needed to support their families. This allowed more mouths to be fed and led to a population explosion.
